Monterey Green Beans
2 tablespoons butter
1/2 cup chopped onion, optional
1/2 pound fresh green beans, cut in half and steamed
1/2 cup sliced fresh mushrooms
1/2 teaspoon salt, optional
1/8 teaspoon pepper, optional
1/2 cup shredded Monterey Jack cheese
In a 2-quart saucepan melt butter. Stir in onion, if desired. Cook uncovered, over medium heat, stirring occasionally, until tender (3 to 5 minutes). Stir in remaining ingredients except cheese. Cover; continue cooking, stirring occasionally for 3 to 5 minutes more. Sprinkle with cheese. Cover; let stand 1 minute.
Yield: 4 (1/2 cup) servings
